MINIATURE CHEESECAKES 
Med. size paper muffin cups
1 pkg. vanilla wafers
1/2 c. sugar
12 oz. cream cheese, softened
2 eggs
1 tsp. lemon juice
1 (19 oz.) can cherry pie filling (or blueberry or raspberry)

Preheat oven to 350 degrees. Mix sugar, cream cheese, eggs, and lemon juice until smooth. Line cup cake pans with papers. Place 1 vanilla wafer in bottom of each. Pour 1 heaping teaspoonful of batter into each cup. Bake for 15 minutes. Cool. Spoon pie filling onto each cup and refrigerate 1 hour.
