MINIATURE CHEESECAKES 
1 lb. cream cheese
3/4 c. sugar
1 box vanilla wafers
1 tsp. vanilla
2 eggs
1 can Topping

TOPPINGS:

1 can cherry pie filling or
1 can blueberry filling or
1 can apple pie filling or
All of above

Crush vanilla wafers. Beat cream cheese, sugar, vanilla, and 2 eggs until smooth and creamy. Place a miniature muffin cup in a muffin tin. Place about 1/2 teaspoon of crushed wafer in bottom of each cup. Fill 3/4 full with cream cheese mixture. Bake at 375 degrees for 12 minutes. Cool. Top with pie filling. Store in refrigerator. Serves 36.
