CREOLE EGGPLANT 
1 med. eggplant
1 med. green pepper
1 med. onion
1/4 tsp. rosemary
2 cloves garlic
1 (8 oz.) can tomato sauce
1/2 tsp. dill weed
1/4 tsp. thyme

Peel and cut eggplant, chop pepper and onion and mince garlic. Combine all ingredients in covered saucepan. Cook over low heat 15-20 minutes, stirring occasionally.
