STUFFED SHELLS 
36 jumbo shells, cooked, drained, cooled
2 c. cottage cheese
4 oz. shredded Cheddar cheese
1/2 c. grated Parmesan cheese
2 egg whites (or 1 egg)
12 oz. shredded cooked chicken or turkey breast
1 tsp. parsley flakes
1 tsp. minced dry onion
1 tsp. oregano
1/4 tsp. pepper
1 jar (30 oz.) meatless spaghetti sauce

Combine all ingredients except shells and spaghetti sauce. Spread a thin layer of spaghetti sauce in a 9x13x2 inch pan. Stuff shells with cheese mixture and place open side down in pan in a single layer. Cover with remaining sauce (about 2 tablespoons sauce per shell). Sprinkle with Parmesan cheese if desired. Bake covered at 350 degrees for 30 minutes.

To prepare ahead of time, do not top shells with sauce until ready to cook. Freeze unsauced shells if desired.
