PEACH PICKLE 
1/2 bushel small firm peaches
12 lb. sugar
1 qt. water
2 dozen whole cloves
6-8 sticks cinnamon, broken up

Peel peaches, boil sugar, vinegar, water, and spices until a moderately thick syrup forms. Add the peaches about 1 dozen at a time and boil until peaches can be stuck to the seeds with a straw. (Stir them occasionally.) Continue until all peaches are cooked. Fill jars with peaches, add syrup. Seal.
