SPICED PEACHES | |
2 (29 oz.) cans sliced peaches 3/4 c. sugar 1/4 c. vinegar 1/4 c. mixed pickling spices (tied in a cloth) Ground cinnamon, optional Ground cloves, optional Drain juice from both cans of peaches into saucepan. Add sugar, vinegar and pickling spices. Bring to a boil, reduce heat immediately to a simmer. Let mixture simmer 5 minutes. Add the peaches to the simmering juice. Let simmer 2 minutes. Turn off heat. Let peaches stay in juice. If you like peaches spicier add a little cinnamon and cloves. May be eaten now but it is better if left overnight. Remove the bagged spices. This dish will last for ages in the refrigerator. |
