HEARTY HEALTHY GROUPER 
3 1/2 lb. fresh grouper
Juice of 1 lemon
white pepper
garlic powder
paprika
watercress or parsley
8 seeded plums with skin
Juice of 1 lemon
1/2 c. white wine

Cut grouper into 6 portions. Place on cookie sheet. Pour juice of 1 lemon over fish and lightly season with pepper and garlic powder (not garlic salt). Place in 325°F oven 12-16 minutes. Cook the fish only until it is no longer translucent and is flaky. Do not overcook.

In a saucepan, cook plums with the juice of the second lemon over medium heat for about 15 minutes or until thickened to the desired consistency. Puree in blender until smooth.

Serve the plum sauce as an accompaniment to the fish.

Garnish fish with watercress, parsley or other greens. Sprinkle fish lightly with paprika, for extra color.

Serve with lemon wedges, if desired.
