DILL SHRIMP SALAD 
1 lb. shrimp
3/4 c. oil
1/4 c. wine vinegar
4 tsp. fresh dill, chopped (1 1/2 tsp. dry)
1/8 tsp. pepper
1/4 c. chopped onion
2 c. celery, sliced
1/8 tsp. salt

Shell, devein and steam shrimp for 3 to 5 minutes. Mix oil, vinegar, dill, salt and pepper. Marinate cooked shrimp in oil-vinegar mixture for 2 hours in refrigerator. Drain shrimp and mix with remaining ingredients. Serve on lettuce leaves. Makes 4 servings.
