TEXAS VENISON CHILI 
2 lbs. coarsely ground venison
1/4 c. vegetable oil
1 c. chopped onions
2 cloves garlic, minced
1 lg. green pepper, cut in strips
3 tbsp. chili powder
2 tsp. sugar
3 1/2 c. whole tomatoes
1 c. tomato sauce
1 c. water
1/2 tsp. salt
2 c. kidney beans

Brown venison in vegetable oil. Add onions, garlic, and green pepper. Cook 5 minutes, stirring constantly. Add chili powder, sugar, tomatoes, tomato sauce, water, and salt. Simmer 1 1/2 hours. Just before serving, add kidney beans. Serves 6-8.

Chili was developed in the cow camps of Texas. And like Texas BBQ, there's no single original recipe that "defines" Texas chili. The camp cooks pretty much added any sort of meat and beans they saw fit - black beans, pinto beans, sausage, buffalo, venison, even rattlesnake and used coffee grounds. If they ran out of ancho chilis, then they made chili powder from another species of chili. So there you go. From an historical perspective, both chili with and without beans is native to Texas.

Here in South Texas we have a strict "NO BEANS" policy when it comes to our chili. Beans on the side is OK. All you Northerners and weirdo Austinites (who are really just a bunch of transplanted Northerners) can Bean yourself!

I have never know anything else than chili with beans! We grew up wondering where our next meal would come from, bean loaded down chili (Beans, tomatos, chili powder, and any type of meat), was a main staple in our home. It was cheap and easy and could be made in big batches without costing a whole lot. As I say to each your own, I add Kidney and chili beans in abundance as it makes it more filling and yes ther beans are good for you.

I have been making venison chili for about 25 years for my family and for competitions, and believe me beans are a must IN THE CHILI. From a person from lower south Texas Chili with no beans are used for hot dogs. As a matter of fact I will be making my chili for a 27th annual wild game cook-off and have never heard any complaints.
