1 c. molasses 1/2 c. butter 1 tsp. salt 1 tsp. baking soda 1 3/4 tsp. baking powder 2 1/2 c. flour 1 1/2 tsp. ginger Heat molasses to boiling point. Remove from heat. Stir in butter and soda. Sift flour, baking powder, salt, and ginger; stir into the molasses mixture. Chill for about 1 hour. Roll out very thin and cut into desired shapes. Place on lightly greased cookie sheet. Bake at 350 degrees for 5 to 7 minutes. Overbaking gives a bitter taste but makes for good hard saddlebag cookies. |
