PUMPKIN PIE I 
1 1/2 c. Nuggets or Grape Nuts cereal
1/3 c. apple juice concentrate
1 tsp. cinnamon

Mix above ingredients in a 9 inch pie pan. Press to form shell.

FILLING:

3/4 c. apple juice concentrate
1/4 c. honey
1 tbsp. molasses
1/2 tsp. cinnamon
3/4 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. ground cloves
2 c. pureed cooked pumpkin
6 egg whites
3 tbsp. sweet dark rum
3 tbsp. crystallized ginger, chopped

In a bowl, combine the apple juice concentrate, honey, molasses, spices, and pureed pumpkin. In another bowl, beat the eggs with the rum. Combine the 2 mixtures and blend thoroughly. Sprinkle the crystallized ginger over the bottom of the pie crust. Carefully ladle the filling over the ginger. Bake the pies in the preheated 400 degree oven for 35 to 40 minutes or until a knife inserted comes out clean.
