PUMPKIN SOUP 
2 tbsp. butter
2 tbsp. chopped onions
1/2 tsp. ginger
1 tbsp. flour
2 c. prepared pumpkin, not canned
2 c. canned chicken broth
2 c. milk
Salt to season

Saute butter, onion and ginger. Stir in flour. Add pumpkin, cook 5 minutes. Gradually add stock and milk. Simmer 5 minutes. Season with salt. Yield: 4 servings. So delicious you'll want to double the recipe.
