TARRAGON CHICKEN IN WHITE WINE 
2 double chicken breasts, boned & skinned
Salt & red pepper
1 1/2 tsp. tarragon (crush in your hand)
Paprika
1 tsp. butter
4 scallions, sliced
1/2 c. dry white wine

Heat the butter briefly. Add chicken and sprinkle with half the tarragon, paprika, salt and pepper. Turn the chicken and add the scallions. Add the other half of the seasonings. Add the wine. Simmer briefly (less than 5 minutes) until chicken is done. Turn the heat higher to evaporate the wine. The sauce should just coat the chicken. Serves 4.

This is a very low calorie dish which is also elegant enough for company. The meal takes about 5-8 minutes to cook.
