ESSIE'S VEGETABLE CASSEROLE 
2 (10 oz.) pkgs. frozen chopped broccoli (may use spinach or other vegetable)
2 eggs, beaten
1 can cream of mushroom or celery soup
1 c. grated cheese
4 tbsp. chopped onion
1/2 c. mayonnaise
Dash pepper
1/2 c. crushed crackers
4 tbsp. butter

Cook vegetables according to package directions; drain well. Stir together eggs, soup, mayonnaise, cheese, onions and seasonings. Stir into vegetables.

Pour into greased 2 quart casserole. Top with cracker crumbs and butter. Bake at 350 degrees for 35-40 minutes. Serves 6.
