EGGPLANT CASSEROLE 
2 eggplants
2 lb. hamburger meat
2 chopped onions
1 bell pepper
2 sm. cans tomato sauce
2 c. Cheddar cheese
2 c. mozzarella cheese

Peel and chop eggplant. Place in water and cook until soft and can mash like potatoes. Saute the onions and bell pepper. Brown meat. Mix eggplant into meat mixture.

In a large baking dish layer eggplant, meat mixture and cheese alternately with cheese left on top. Bake until cheese is melted. Be sure to add tomato sauce before layering.
