CAJUN STEW 
1 1/2 lb. tenderized stew meat
1 potato, cubed
1 c. frozen mixed vegetables
2 (14 1/2 oz.) cans Cajun-style stewed tomatoes
Salt and pepper to taste

Trim meat into 1-inch pieces. Place in crock pot, then add potato, mixed vegetables and stewed tomatoes. Cook on HIGH setting 6-8 hours, adding water if needed. Season with salt and pepper after cooking. Yield 6 servings.
