SWISS POTATO PIE | |
4 c. peeled, diced, cold boiled potatoes 2 tbsp. butter 1/4 c. grated Swiss cheese 3 tbsp. cornflake crumbs 3 eggs, separated 1/2 c. sour cream Place potatoes in mixing bowl. Mix butter, beaten egg yolks and sour cream. Add to potatoes, seasoned with salt and pepper. Beat egg whites until stiff, but not to dry. Fold into potato mixture. Pour into greased 10 inch pie pan. Combine Swiss cheese and cornflake crumbs. Sprinkle over top of potatoes. Bake at 350 degrees for 25 to 30 minutes. Cut in wedges to serve. |
