CRAB MEAT AU GRATIN 
1/2 lb. onions
3 ribs celery
1/2 lb. butter (or butter - 2 sticks)
4 tbsp. flour
1 lg. and 1 sm. can evaporated milk
2 egg yolks
2 lbs. fresh white crab meat
10 oz. yellow cheese, grated

Saute onions and celery in butter until soft. Add flour and blend. Add milk and blend. Remove from heat, add egg yolks, crab meat, salt and pepper, and grated cheese. Put in casserole with cheese on top, and bake at 350 degrees for just long enough for cheese to melt.
