COCONUT-PUMPKIN LOAF 
2 c. sugar
2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
2 (3 1/2 oz.) pkg. coconut pie filling (not instant)
5 eggs
1 1/2 c. oil
2 c. cooked pumpkin (1 lb.)
2/3 c. coconut

Mix together first 8 ingredients in large mixing bowl. In another bowl, mix eggs, oil, pumpkin. Add egg mix to dry ingredients. Grease two 8 1/2 x 4 1/2 x 2 1/2 inch pans, cover bottom with greased wax paper. Bake at 350 degrees for 50 minutes. Cool, turn out. Yield: 2 loaves.
