SPINACH PIE PARMA | |
2 c. seasoned croutons, coarsely crushed 1/4 c. butter, melted 1/4 c. plus 2 tbsp. grated Parmesan cheese 1 pkg. (10 oz.) frozen chopped spinach, thawed and drained 1 c. small curd cottage cheese 4 oz. Monterey Jack cheese, cut into 1/2 inch cubes 3 eggs, beaten 1/4 c. chopped onion 2 tbsp. dairy sour cream 1 clove garlic 1/2 tsp. salt Combine croutons and butter; mix well. Press onto bottom of 9 inch pie plate. Combine 1/4 cup Parmesan cheese and remaining ingredients; mix well. Spoon over crust. Bake at 350 degrees for 35 minutes or until set. Sprinkle with 2 tablespoon Parmesan cheese; let stand 5 minutes. Makes 6 to 8 servings. |
