EMILY'S FAVORITE PANCAKES 
3 eggs
2 c. milk
1 c. flour
1 1/2 tsp. sugar
1/2 tsp. salt, optional
1/4 c. butter, melted

Blend all ingredients together except butter until smooth (no lumps please!) Bring batter to room temperature; blend in melted butter alternate method (microwave); Melt butter in microwave. Add milk and eggs, whisk until eggs are well beaten. Stir in flour, salt and sugar. Mixing until smooth.

Heat nonstick frying pan (8 to 10 inches) until very hot, turn down flame, pour 2 tablespoons of batter into pan and tilt so batter spreads out. Cook about 30 seconds and flip. Cook another 30 seconds and slide onto plate. Spread with melted butter and sprinkle with confectioners sugar or serve with fruit, yogurt, syrup and jam or jelly.

NOTE: Pancakes freeze well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
