PINTO BEAN SPICE CAKE 
1 c. sugar
1/4 c. butter
1 egg, beaten
2 c. cooked pinto beans, mashed
1 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
2 c. diced raw apples
1 c. raisins
1/2 c. chopped walnuts
2 tsp. vanilla

Set oven to 375 degrees. Cream sugar and butter. Add beaten egg and mashed pinto beans. Sift dry ingredients together and add to sugar mixture. Mix well. Add apples, raisins, nuts and vanilla. Pour into a well-greased 10-inch tube pan. Bake for 45 minutes.
