SUNDAY PANCAKE 
2 c. whole wheat pastry flour
1 tsp. salt
2 c. milk
8 eggs
1/2 to 1 cup blueberries
1/2 c. cheese, grated or small cubes

Mix together flour and salt. Add milk and eggs and beat 1 minute with spoon or electric mixer. Stir in blueberries and cheese. In 9 x 13 inch pan, melt 1/4 cup butter. Pour in batter and bake 20 to 30 minutes until risen in peaks and firm. Serve in squares with honey, maple syrup, etc. for a healthy, delicious breakfast for four to six people.
