PECAN RAISIN MUFFINS | |
1 3/4 c. unsifted flour 1/4 c. sugar 1 tbsp. baking powder 3/4 tsp. salt 1/3 c. butter 1/2 c. chopped pecans 1/3 c. dark raisins 1 egg 3/4 c. milk Mix flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse meal. Mix pecans and raisins. Beat together egg and milk. Add all at once to dry mixture. Stir lightly to dampen dry ingredients. Fill 12 greased muffin cup, about 3/4 full. Bake at 400 degrees for 15 to 20 minutes. |
