CARROT BARS 
2 c. flour
1 c. sugar
1 c. brown sugar
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
1 c. oil
3 eggs
2 tsp. vanilla
1 1/2 c. cooked, pureed carrots
1/2 c. chopped walnuts
1/2 c. chopped pecans
1 c. coconut
1 (8 oz.) can crushed pineapple with juice

Preheat oven to 350 degrees. Grease and flour 9 x 13 inch pan. Mix together first 6 ingredients. Add oil, eggs, and vanilla and beat well. Fold in remaining ingredients and bake 1 hour.
