HOMESTYLE FRENCH FRIES 
4 to 5 large potatoes (any kind)
3 cups vegetable oil
salt and pepper (if desired)

Preheat oven to hot (450°F).

Slice potatoes into wedges, disks, or cubes.

Heat 3 cups of vegetable oil in a pan or shallow pot for about 3 to 5 minutes over medium heat (oil will heat fast).

Carefully (to avoid splash) place sliced potatoes into oil. The oil will begin to boil rapidly, do NOT adjust the heat, keep at medium heat.

Allow potatoes to boil until they become buoyant and they obtain a golden brown coloring, potatoes will also become flimsy after being fried in this manner.

Using a metal (or hard plastic) straining spoon, scoop out the potatoes onto a baking sheet. Drain off any excess oil that may be present.

Place baking sheet into the oven and bake for 15 to 20 minutes.

Serve and enjoy!
