CARROT BREAD | |
2 c. whole wheat flour 1 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. sea salt (optional) 1 1/2 c. grated carrots, packed 2/3 c. olive oil 1/2 c. honey 2 eggs 1/2 c. raisins and water to make 1 1/2 c. Place first 4 ingredients in bowl and blend. Heat water to cover raisins or microwave 2 minutes. Set aside. Add carrots, honey, eggs, and oil to flour mixture and pour raisins and water over and mix just enough to moist through. Bake at 325 degrees until tested done, approximately 40 minutes. Makes 2 small loaves. |
