PUMPKIN OAT MUFFINS 
1 1/3 c. oat bran
1 c. rolled oats
1 1/4 c. skim milk
3/4 c. whole wheat flour
1/2 c. brown sugar
1 tbsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. ginger
3/4 c. cooked or canned pumpkin
2 lg. egg whites
1/2 c. raisins
2 tbsp. salad oil

In large bowl, mix oat bran, oatmeal and milk. Combine flour, sugar, baking powder, and spices; set aside.

Combine pumpkin, egg, salad oil and raisins in medium bowl. Stir oat mix to pumpkin mix. Blend. Add flour mix and mix until all ingredients are moistened. Spoon into greased muffin cups. Bake in 400 degree oven for 20-25 minutes.
