PUMPKIN -RAISIN MUFFINS 
1/4 c. raisins
1/4 c. apple juice
1 c. flour
1 c. whole wheat flour
1/2 c. corn meal
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ginger
1/2 tbsp. cinnamon
1/4 c. brown sugar
1/2 (28 oz.) can pumpkin puree
1/2 c. honey
2 tbsp. buttermilk
1 egg
1 tbsp. sunflower oil

Plump raisins in apple juice 1 hour. Spray 14 muffin cups with Pam. Combine flour, whole wheat flour, cornmeal, baking powder, salt, ginger, cinnamon. Combine sugar, pumpkin, honey, buttermilk, eggs and oil in bowl. Mix in dry ingredients just until combined. Don't over mix. Bake at 400 degrees for 25 minutes.
