FRESH CARROT BREAD | |
2 c. sugar 3 eggs 1 c. oil 3 c. sifted flour 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 2 c. grated raw carrots 1 c. chopped pecans Mix sugar, oil and eggs in a bowl. Add sifted flour, baking powder, soda, salt and cinnamon. Stir in carrots and nuts. Pour into 2 greased bread pans and bake in a 350 degree oven for 40 minutes. Turn bread out of pans onto wire rack and cool. Best if allowed to cool overnight before slicing. |
