HUEVOS RANCHERO 
1 sm. onion, chopped
1 (3 oz.) can green chilies, chopped
1 (8 oz.) can tomato sauce or Ro-tel
8 eggs
1 tbsp. oil
1 lb. grated cheddar cheese

Saute onions and green chilies in hot oil. Add tomatoes. Simmer for 5 minutes. Break eggs in 1 at a time (don't scramble). Let cook in sauce until whites are solid. Top with grated cheese.
