BRUNCH PUDDING 
4 c. milk
1/2 c. rice, uncooked
1 c. raisins
1/4 c. butter
4 eggs
1/2 c. brown sugar
2 tbsp. vanilla
1 1/2 c. granola or quick oats
Pecans and cinnamon on top

In saucepan bring 2 cups milk and rice, raisins to boiling point. Cover and cook 20 minutes. Remove from heat. Add butter.

In a mixing bowl blend eggs and other 2 cups of milk, sugar and vanilla. Add rice mixture to egg mixture. Pour into 9x9 pan. Sprinkle granola on top. Bake 325 degrees for 30 minutes. Bake additional 20 minutes. 8 servings.
