ZIGEUNER GOULASH | |
2 tbsp. vegetable oil or bacon fat 1 1/2 lbs. beef, boneless chuck, tip or round, cubed 3/4 inch 2-3 onions, chopped 1-2 red peppers, cut into small pieces, 1 1/2 inch 1 green pepper, cut into pieces 2 c. beef broth (instant beef bouillon) 2 tsp. paprika 2-3 tsp. salt 1 pinch of sugar Sour cream, flour Heat oil. Cook and stir beef and onions until brown, about 15 minutes. Add red and green peppers, cover and simmer 5 minutes. Add broth, paprika, salt and sugar. Heat to boiling, reduce heat. Cover and simmer 1 3/4 hours, until meat is tender. Remove from heat and add sour cream (approximately 1/4 cup). Thicken with flour if desired. Bring to a short boil, then serve with rice or noodles. |
