GARDEN OF EDEN SALAD 
1 (3 oz.) box lemon gelatin mix
1 sm. can crushed pineapple, drained
1 med. apple, diced (about 3/4 cup)
Use a good red delicious or winesap
1 c. celery, chopped
1/2 c. nuts, chopped
1 (8 oz.) pkg. cream cheese, softened
1/4 c. Miracle Whip or other salad dressing
1 (4 oz.) carton whipped topping (Cool Whip, etc.) or use whipped cream

Drain as much juice from the pineapple as possible. Soften the lemon gelatin in 1 cup hot water. Mix until gelatin is dissolved. Then add the drained pineapple juice and enough cold water to make 3/4 cup. While waiting for the gelatin to jell, chop the apple, celery, and nuts. Add to the gelatin mix when mix is set.

Combine softened cream cheese and salad dressing. Spread this mixture over the gelatin. Then spread the whipped topping or cream on top of the cream cheese mixture. Keep in refrigerator. Delicious as a salad or dessert.
