BASIC OAT BRAN MUFFINS 
3/4 c. whole wheat pastry flour
3/4 c. oat bran
2 tsp. baking powder
1/2 tsp. cinnamon (optional)
3 tbsp. vegetable oil
3 tbsp. honey or maple syrup
3/4 c. soy milk or skim milk

Mix dry and liquid ingredients in separate bowls, then combine and mix thoroughly. Fill 6-8 muffin cups 3/4 full. Bake at 375 degrees F. for 15 minuts.
