1 c. sugar
3/4 c. butter (not unsalted)
1/4 c. honey
1 egg
1 tbsp. baking soda
1 tbsp. vanilla
2 1/2 c. (approximately) flour

Preheat oven to 325 degrees, not hotter. Mix sugar, softened butter, and honey. Add egg and vanilla. Sift soda with 2 cups flour and add gradually. Add additional flour until a thick dough results.

Form small, even, round balls with hands. Bake for 12 minutes on ungreased cookie sheet until a deep golden brown. Makes about 3 dozen cookies.
