APPLE RAISINS CUPCAKES 
1 c. all purpose flour
1 tsp. baking soda
1/4 c. butter, softened
2/3 c. sugar
1 tsp. ground cinnamon
1 tsp. vanilla
1 1/2 c. dark raisins
1 1/2 c. grated Granny Smith apples

In a small bowl, combine flour and baking soda. In a large bowl, cream butter with sugar, cinnamon, and vanilla. Mix dry ingredients well and add fruit mixture and mix well. Divide mixture into 12 well greased muffin cups. Bake at 350 degrees for about 25 minutes. Cakes should spring back when touched. Cool slightly before removing from pan.
