ZUCCHINI LASAGNA 
3 med. zucchini
1/2 c. diced onion
1 tsp. garlic
2/3 lb. Italian sausage
1/2 tsp. oregano
Few grains red pepper
1 (8 oz.) can tomato sauce
1 c. grated Mozzarella cheese

Peel zucchini and slice lengthwise into 1/4" to 1/2" strips. Cook onion and sausage until browned; add garlic, oregano and pepper and cook 30 seconds; drain off grease. Add tomato sauce to meat and simmer 5 minutes. Arrange half the zucchini strips in bottom of 7"x10" baking dish; cover with half the sauce and half the cheese; repeat the layers. Cover with foil and bake at 375 degrees for 45 minutes until bubbly. Cut into squares to serve. Serves 4.
