BUTTERSCOTCH PIE 
3 tbsp. flour
1/2 tsp. salt
1 c. milk
1 tbsp. butter
1 (9 inch) pie shell, baked
1 c. brown sugar
1 c. white sugar
3 egg yolks
1 1/2 tsp. vanilla

MERINGUE:

3 egg whites, beaten stiff
6 tbsp. sugar

Cook flour, salt, sugar and milk until thickened. Add beaten egg yolks, butter and vanilla. Cook until thick. Pour into pie shell, top with egg white meringue and brown.

VARIATION: For 'caramel nut' pie, add 1/2 cup pecans and 1 tablespoon caramel flavored ice cream topping.
