GERMAN POTATO SALAD 
4 slices bacon
1/2 c. chopped onion
1/4 c. sugar
2 tbsp. flour
1/2 tsp. salt
Dash pepper
1 c. water
1/3 c. vinegar
4 c. cooked, peeled and sliced new potatoes
Fresh parsley, if desired

In large skillet, fry bacon until crisp. Remove bacon, drain on paper towels. Saute onion in bacon drippings until crisp tender. Add sugar, flour, salt, and pepper; blend well. Cook until mixture is smooth and bubbly, stirring constantly. Gradually add water and vinegar. Cook until mixture boils and thickens, stirring constantly. Stir in potatoes; heat thoroughly. Spoon into serving dish. Crumble bacon; sprinkle over top. Garnish with parsley. 8 servings.

MICROWAVE DIRECTIONS: Cut bacon into 1 inch pieces. Place bacon in large microwave safe bowl; cover with waxed paper. Microwave on HIGH for 6 to 8 minutes or until bacon is almost crisp, stirring every 2 minutes. Remove bacon, place on paper towels. Add onion to bacon drippings; cover with waxed paper. Microwave on HIGH for 1 1/2 to 2 minutes or until almost tender. Add sugar, flour, salt and pepper; blend well. Add water and vinegar. Blend well. Microwave on HIGH for 3 to 5 1/2 minutes or until mixture boils and thickens, stirring once halfway through cooking. Stir in potatoes; microwave on HIGH for 5 to 7 minutes or until thoroughly heated. Continue as directed.

Since microwave ovens vary in power, you may need to adjust your cooking time.
