RITZY CHICKEN 
3 packs Ritz crackers (from 1 lb. box), crushed
1 stick butter, melted
4 lbs. chicken (boneless), cubed (breasts & thigh meat)
4 cans cream of chicken soup
16 oz. sour cream
2 tbsp. poppy seed

Brown chicken then cube in bite size pieces. Place in bottom of 13"x9"x2" Pyrex baking dish. Salt and pepper to taste. Mix cream of chicken soup and sour cream in separate bowl. Layer mixture on top of chicken. Layer crushed crackers on top. Sprinkle poppy seeds on top. Bake at 350 degrees for 1 to 1 1/2 hours. This is a good party recipe. Serves about 10 to 15 people.
