TURKEY OR HAM BRUNCH DISH
1 1/2 lb. ground turkey
1 loaf day old white bread
1/2 lb. butter, melted (reserve 1/2 c. for sauce)
1 qt. milk
1 tsp. salt
1 tsp. Accent (MSG)
1/4 tsp. pepper
1 lb. mild Cheddar cheese
1 c. finely diced celery
1 med. brown onion, diced
1 c. mayonnaise
3 eggs

Brown turkey in small amount of shortening. Salt to taste. (Ham may be substituted. If so, skip these two steps.) Spray a 9 x 13 inch casserole with Pam. Butter both sides of the bread. Line pan with half of bread (6 to 8 slices). Combine diced celery and onions with meat. Sprinkle evenly over bread. Cover with remaining bread.

Mix 1 1/2 cups milk, mayonnaise and eggs with beater. Pour over casserole. Cover and refrigerate overnight.

Make a white sauce by melting 1/4 cup butter in saucepan over low heat. Blend in 1/4 cup flour, 1 teaspoon salt, 1 teaspoon Accent and 1/4 teaspoon pepper. Heat and stir until it bubbles. Gradually add 2 cups milk. Stir and cook rapidly until thickened. Cool and refrigerate for next day. (Save 1/2 cup milk to thin sauce the next day.)

Before baking, spread grated cheese and thinned white sauce over all.

Cover with foil and bake in a preheated 350 degree oven for 30 minutes, then uncover and continue baking for 30 minutes. Let stand 5 minutes before cutting.
