TABOULI SALAD 
1 c. bulgar (cracked wheat)
5 tomatoes, chopped
2 or 3 bunches scallion, chopped
2 or 3 bunches parsley, chopped
4 tsp. dried mint or 2 tsp. fresh mint, chopped
1 head Romaine lettuce, chopped
1/2 c. olive oil
Juice of 8 lemons
Salt and pepper to taste

In saucepan, put 2 inches of water; bring to a boil. Add bulgar; remove from heat and put a cover on it. Let set about 1/2 to 1 hour. Drain. Add the chopped vegetables, olive oil, lemon juice, salt, and pepper. Mix well. Let it set to meld the flavors for a few hours.
