PAT'S VEGGIE SALAD 
1 c. bulghur wheat
1 1/2 c. boiling water
1 tsp. salt (optional)
1/4 c. lemon or lime juice
1 tsp. crushed garlic
1/2 c. chopped scallions (including some greens)
1/2 tsp. dried mint
1/4 c. olive oil
2 tomatoes, diced
1 can chickpeas
1/2 c. frozen peas
1/2 c. grated carrot
1 chopped cucumber
green peppers (optional)

Garnish with Feta cheese (crumbled) and oil-cured black olives. Combine bulghur wheat, water and salt in bowl; cover and let sit for about 20 minutes until wheat is chewable. Add lemon juice, garlic and mint; mix thoroughly. Refrigerate for 2 to 3 hours. Add chopped veggies; garnish with Feta and black olives. Test seasonings. May need more lemon juice.

Note: You can substitute 1 cup of couscous and 1 cup boiling water for the bulghur wheat.
