GOLAKBI (STUFFED CABBAGE) | |
1 lg. head cabbage 2 lbs. ground beef 1 lb. rice 1 onion, chopped & sauteed in butter or bacon fat 1 can tomato soup or puree tomatoes Salt & pepper to taste Core cabbage and boil in just enough water to cover cabbage. Remove the outer leaves as soon as they become limp or flexible, continuing this process until all the leaves are softened and removed. Prepare rice according to package directions. Brown the ground beef. Mix beef, rice, onions and seasonings together. Place heaping tablespoon of this filling on each cabbage leaf. Bring end of the leaf over the filling, fold over each side and then continue to roll until the total leaf is used. Line a pan with extra leaves that are left over. Place golabki in the pan. Top with the tomato soup or pureed tomatoes. Add water to cover bottom of pan to prevent burning. Cover with extra leaves. Bake at 350 degrees for 1 1/2 to 2 hours. Be sure to check for doneness. |
