GRANDMA'S RHUBARB PIE 
2 c. rhubarb
1 c. sugar
2 tbsp. butter
2 tbsp. flour
1 egg
1/8 tsp. salt
1 tsp. lemon juice

Beat egg. Melt butter, cool slightly. Mix flour and sugar together. Add flour and sugar to butter. Add lemon juice and salt, egg and put half of above mixture into pie crust. Add all the rhubarb. Put remaining mixture on top of rhubarb. Do a lattice top crust for top of pie. Bake at 400 degrees for 40-45 minutes. Sprinkle confectioners' sugar on top after cooled.
