SWEDISH PANCAKES 
4 eggs, separated
2 1/4 c. milk
1 1/4 c. flour
3/4 tsp. salt
4 tbsp. melted butter
2 tbsp. sugar

Beat egg yolks, sugar and salt together. Add flour and milk alternately, beating well. Fold in stiffly beaten egg whites. Batter should be very thin. Have griddle slightly greased and hot. Swirl in pan until a thin layer. Brown evenly on both sides. They cook quickly. Roll up with butter, jelly, brown sugar, etc.
