SWEDISH PANCAKE WITH FRUIT 
3 eggs
1 1/2 c. milk
3/4 c. flour
1 tbsp. sugar
1/2 tsp. salt
1 c. apples or blueberries
Powdered sugar

Peel and chop apples or wash blueberries. Put in small saucepan. Add 1/4 cup water and 1/4 cup sugar.

For apples, add 1/2 teaspoon cinnamon, 1 teaspoon cornstarch. Bring to boil; boil 2 minutes. Remove to thicken from stove.

For pancakes: Mix eggs, milk, flour, sugar and salt well. Pour 1/3 cup into hot greased or no stick fry pan tilting pan so the bottom of pan is coated with pancake. Cook until browned then turn over and brown other side. Roll pancake up. Put 2 or 3 on a plate, then pour apple or blueberries over top and sprinkle with powdered sugar. Makes 5-6 pancakes.
