FRAPANNKAKOR (CRISP SWEDISH
PANCAKES)
 
1 c. flour
1 1/3 c. water
2 tsp. powdered or granulated sugar
1/2 c. melted butter
1 1/3 c. heavy cream

Mix flour and water; set aside for about an hour. Add sugar and melted shortening. Fold in stiffly beaten cream.

Heat pancake iron or griddle, and brush with butter. Drop by spoonfuls on pancake iron and bake until golden brown on both sides. Remove pancakes and roll each one around a fork to form a roll.

Place rolls on a serving plate and serve with sugar, crushed fresh berries, or fruit or jam.
