QUICHE LORRAINE 
Pastry for 1 crust, unbaked
1 1/2 c. grated Swiss cheese
5 slices cooked bacon, cut in 1 inch pieces
3 slices cooked bacon, cut in half for top
4 eggs
1 c. heavy cream
1/2 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/3 tsp. powdered mustard
Onion (optional)
Broccoli (optional)
Mushrooms (optional)

Sprinkle cheese and 1 inch bacon pieces into the pastry. Beat remaining ingredients together and pour over cheese and bacon. Add onion, broccoli, and mushrooms if you desire at this time. Bake in preheated 375 degrees for 10 minutes. Top with remaining bacon and continue baking for 35 minutes or until firm and browned. Cut into wedges.
